  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 2 sweet peppers, diced

  • 4 cloves garlic, minced

  • 1 (8-ounce) package freekeh 

  • 1 jalapeno pepper, seeded and diced

  • 1-3 + teaspoons chili powder (depending on your spice meter)

  • 1 teaspoon cumin

  • 1 (14.5-ounce) can fire roasted crushed tomatoes

  • 1 (14.5 ounce) can tomato sauce

  • 1 (15 ounce can) black beans

  • 1 1/2 cups water

  • cracked black pepper and sea salt to taste


  1. In a large pot over medium heat, add olive oil, onion, sweet peppers and garlic. Saute for 4-5 minutes until onions are translucent. 

  2. Add the freekeh, jalapeno pepper, chili powder, cumin, fire roasted crushed tomatoes, tomato sauce, black beans and stir together. Pour the water on top and stir to combine bring to a boil then reduce heat to low, cover and continue to simmer for about 30-35 minutes until thickened. Season with cracked black pepper and sea salt. Serve warm.
