Legend has it Freekeh was created in the Fertile Crescent thousands of years ago, when a crop of young green grains were set ablaze. In attempts to salvage what they could, the farmers rubbed away the burnt chaff to discover the tender roasted kernels inside. Not only was the grain delicious, it became a staple within Middle Eastern food cultures. Freekeh, or farik (Arabic for "to rub"), is the ancient traditional process of fire roasting young grains and removing the seared chaff to reveal the nutrient dense kernels inside.
